A skewer is, like the fork, pretty much a mature technology. It was probably the first kitchen tool and that we continue to use them is a testament to their continuing utility. I bought this vertical skewer with the hope that I might be able to achieve something similar to shwarma or to grilling and in the Brazilian style.
As our first experiment we marinated beef, chicken, squash, bell pepper, onion, prosciutto, tomato and bacon in a Brazilian style marinade for 6 hours and then layered the ingredients on the skewer.
We grilled indirect heat at 325 degrees for about 90 minutes. It was pretty good but the veggies could have used more cooking. Next time i think we'll grill for 2.5 hours instead.
